I have here the following units:

VP-R48G
R29C
C313S
C317S

What else do I need to make call in in each unit?
Do I need SIP server? is it possible without a server?

Akuvox Device not only support SIP but also IP call. So SIP server is just an option.
You can set them through IP, actually if you have a router in a Lan, Akuvox device can automatically find each other. To make the contacts more clear, you can login the web portal to set the contacts, set the number as IP address.
